    This quick Angel Food Banana Cake with cake mix is a fast, easy cake recipe and the perfect way to use overripe bananas when you're ready for something other than homemade banana bread or banana pancakes.

    With just a box of cake mix and a few simple ingredients, this cake mix banana cake comes together in minutes and bakes into a moist, fluffy cake that's light as air. Enjoy it plain, with a drizzle of maple cinnamon icing, or topped with rich cinnamon whipped cream.

    • Angel food cake mix. Get the one-step, just-add-water type of angel food cake mix. Not the type of cake mix that needs egg whites or any other added ingredients. 
    • Overripe bananas. I like to use black bananas that are just on the fringe of being thrown away -- they're the sweetest. But as long as they're at least covered with dark brown spots, they should be ripe enough.

    🫐Variations or Substitutions

    • Spices. Instead of cinnamon, add your favorite warm spices like ginger, nutmeg, cardamom, or allspice. Or a spice blend like pumpkin pie spice or apple pie spice. 
    • Different flavors of angel food cake. I love jazzing up a box of angel food cake with different flavors. Try one of these next: Strawberry Angel Food Cake, Blueberry Angel Food Cake, Peach Angel Food Cake, and Orange Angel Food Cake. 
    • Toppings. Instead of the cinnamon drizzle, grab my recipes for cream cheese icing, chocolate ganache, or brown sugar cinnamon whipped cream. Or these other fun toppings for angel food cake.  
    • Mix-ins. Stir in up to one cup of mini chocolate chips for a chocolate chip banana bread angel food cake. 

    🥣How to Make Angel Food Banana Cake with Cake Mix

    Step 1: With a fork or potato masher, mash the bananas in a very large mixing bowl. Add the cake mix, flour, cinnamon, and water. Mix on low speed for 30 seconds, then high speed for 1 minute.

    Step 2: Pour the banana cake batter into an ungreased angel food cake pan. Bake in a preheated oven at 350°F for 35 minutes or until the top is dark golden brown with dry cracks.

    Step 3: Turn the pan upside down and cool the cake completely, about 2 hours. 

    In a small bowl, combine the icing ingredients. Drizzle the cinnamon icing on top of the cake.

    Step 4: Slice with a serrated knife. Serve with whipped cream and fresh banana slices. 

    👉Helpful Hint: Mix banana angel food cake batter in a glass or metal bowl-plastic can hold fats that deflate the egg whites in the cake mix.

    • Mash bananas until smooth for the best texture in your banana cake with cake mix.
    • Cool the cake upside down to keep it tall and fluffy.
    • Slice with a serrated knife for clean, neat pieces.

    🎁Storage

    • Store leftover banana cake in an airtight container or wrapped in plastic wrap for a day or two at room temperature or up to one week in the refrigerator.

    • Freeze the unglazed cake whole or individual slices wrapped in plastic wrap and again in aluminum foil or in a freezer bag. Thaw at room temperature and add the icing.

    Can I make banana angel food cake in a 9x13 pan?

    Yes! If you don't have an angel food cake pan, you can bake this banana cake with cake mix in a 9x13 pan, two metal loaf pans, or a muffin tin. Cool a 9x13 cake upside down propped on cans, and tip loaf pans on their sides to cool.

    Do I need to grease the pan for banana angel food cake?

    No. Do not grease the pan with nonstick cooking spray or line it with parchment paper. The batter needs to cling to the sides so the cake bakes tall and fluffy.

    Can I freeze angel food banana cake with cake mix?

    Yes. Wrap cooled slices tightly in plastic wrap, then place in a freezer bag. Thaw at room temperature and add icing or whipped cream just before serving.

    How do I store banana angel food cake?

    Store covered at room temperature for up to 2 days, or refrigerate for up to 4 days.

    Ingredients
      

    Cake

    • 1 box 16 oz. angel food cake mix 1-step just-add-water type
    • 2 tablespoons flour
    • 1 teaspoon cinnamon
    • 1 ¼ cup mashed overripe bananas about 3 large bananas
    • 1 cup water

    Maple Cinnamon Icing

    • 1 cup powdered sugar, sifted
    • ¼ cup pure maple syrup
    • 2 tablespoons melted butter
    • 1 teaspoon cinnamon
    • ½ teaspoon vanilla extract
    • 1 pinch salt

    Instructions
     

    Banana Angel Food Cake

    • Move the oven rack to the lowest position. Heat the oven to 350.
    • Mash the bananas in a large glass or metal bowl. Add the angel food cake mix, flour, cinnamon, and water. With a handheld electric mixer, mix on low for 30 seconds, then on medium speed for one minute.
    • Pour the cake batter into an ungreased angel food cake pan. Run a thin knife through the batter to break up any air bubbles. Bake for 35 minutes or until the top is golden brown with dry cracks. Internal temperature should reach 206.
    • Immediately turn the pan upside down on a rack or a glass bottle and cool completely, about 2 hours. Remove the cake from the pan and place it on a cake plate.

    Maple Icing

    • Place all of the icing ingredients in a small bowl. Stir until smooth. Immediately drizzle the icing over the cake. If the icing is too thick, warm it briefly in the microwave in 10-second increments. Serve with fresh whipped cream and berries.
    • Store your pumpkin angel food cake tightly covered at room temperature or in the refrigerator for up to 4 days.

    Notes

    • Make angel food cake in a glass or metal bowl. Plastic bowls can have traces of fat from previous uses that can deflate the whipped egg whites.
    • A serrated knife works best for cutting angel food cake without smashing it.
