Peanut butter banana blondies are the perfect dessert for overripe, brown bananas when you're not in the mood for banana bread or banana pancakes. These chocolate chip banana bars are thick, soft, and gooey like cookies, but no scooping and no chilling.

- Mashed bananas. For the sweetest flavor, use overripe bananas that are covered in brown spots or have even turned completely black.
- Unsalted butter. Melt the butter and let it cool slightly. If you use salted butter, reduce the salt by ¼ teaspoon.
- Sugars. Using both brown sugar and white sugar adds moisture and chewiness, and bakes the blondies to a beautiful golden brown. I use dark brown sugar, but light brown sugar will also work.
- Peanut butter. Use regular old grocery store creamy peanut butter, like Skippy or Jif. Natural peanut butter can make the bars crumbly and dry.
- Cinnamon. Cinnamon is optional, but complements the flavors in these banana blondies perfectly.
- Salt. One teaspoon of salt may seem like a lot, but the bars don't taste salty at all. The salt brings out the flavors of the bananas, peanut butter, and chocolate. You can certainly reduce the salt, if needed.
- Chocolate chips. I like the rich flavor and texture of dark chocolate chips and dark chocolate chunks. You can also use semi-sweet chocolate chips, chopped chocolate bar, or peanut butter chips.

Step 1: Whisk the mashed bananas, melted butter, and sugars in a large mixing bowl. Add the vanilla, eggs, and peanut butter and whisk until combined.

Step 2: Add the dry ingredients and stir them into the wet ingredients with a sturdy wooden spoon. Stir in the chocolate chips.

Step 3: Spread the banana blondie batter in an even layer in a prepared 9 x 13 pan. Bake in a preheated oven at 350 for 25-35 minutes.

Step 4: Cool bars in the pan on a wire rack. Cut into squares and serve at room temperature or warmed up with a scoop of vanilla ice cream.

Peanut Butter Banana Blondies
Ingredients
- 1 cup mashed overripe banana (about 3 bananas)
- ½ cup unsalted butter, melted and cooled
- ¾ cup brown sugar
- ¾ cup granulated sugar
- 1 tablespoon vanilla extract
- 2 eggs
- ½ cup creamy peanut butter
- 2 ¼ cups all-purpose flour
- 1 teaspoon cinnamon
- 1 teaspoon baking powder
- 1 teaspoon salt
- 2 cups chocolate chips or chocolate chunks
Instructions
- Preheat the oven to 350 and line a 9 x 13 pan with parchment paper or spray it with nonstick cooking spray.
- Mash the bananas in a large bowl. Add the melted butter and sugars and whisk to combine. Add the vanilla, eggs, and peanut butter and whisk. Add the flour and sprinkle the cinnamon, baking powder, and salt evenly over the flour. With a sturdy wooden spoon, stir the dry ingredients into the wet ingredients until just combined. Stir in the chocolate chips.
- Evenly spread the batter into the prepared pan. If desired, press more chocolate chips and chocolate chunks on top of the blondie batter. Bake for 25-35 minutes or until the edges are golden brown and set and the center still appears a little underbaked. The internal temperature should be 200-205.
