Banana Blondies with peanut butter and chocolate chips are soft, gooey cookie bars with the sweet flavor of banana bread and the chewy texture of cookies. Fast, easy one-bowl blondie recipe
Preheat the oven to 350 and line a 9 x 13 pan with parchment paper or spray it with nonstick cooking spray.
Mash the bananas in a large bowl. Add the melted butter and sugars and whisk to combine. Add the vanilla, eggs, and peanut butter and whisk. Add the flour and sprinkle the cinnamon, baking powder, and salt evenly over the flour. With a sturdy wooden spoon, stir the dry ingredients into the wet ingredients until just combined. Stir in the chocolate chips.
Evenly spread the batter into the prepared pan. If desired, press more chocolate chips and chocolate chunks on top of the blondie batter. Bake for 25-35 minutes or until the edges are golden brown and set and the center still appears a little underbaked. The internal temperature should be 200-205. Cool banana blondies in the pan on a wire rack. Cut into squares and enjoy.
Notes
Use very ripe bananas (lots of brown spots) for the sweetest flavor.
Line your pan with parchment paper for easy removal and clean cuts.
For clean slices, let blondies cool completely — they’re extra gooey straight from the oven.
Swap chocolate chips with chunks or peanut butter chips for even more peanut butter flavor.
