I didn't, until I was testing this recipe for Pumpkin Pancakes from Pancake Mix. I used the same techniques to make these banana pancakes from pancake mix extra soft and puffy.

- Let the batter rest. This allows the liquid to hydrate the flour and the leavening agents to distribute evenly through the batter.

These easy banana pancakes come together with simple ingredients.

- Pancake mix. This recipe has been tested with regular Bisquick, Heart Smart Bisquick, and a complete "just add water" pancake mix. All worked equally well.
- Bananas. You'll need about two medium bananas for one cup of mashed bananas for the pancakes, plus additional for topping. You can also use frozen. Read how to use frozen bananas in baking.
- Butter or oil. You'll need a little butter or vegetable oil to lightly coat the pan for the pancakes and the banana topping.

- Spices and extracts. Add warm spices like nutmeg, allspice, or cardamom, or flavor extracts like maple, almond, or vanilla extract.
- Mix-ins. Add nuts to the batter, or sprinkle a few chocolate chips or fresh or frozen blueberries on top of the pancakes before flipping.
🥣How to Make Banana Pancakes with Pancake Mix

Step 1. Combine the dry ingredients. Whisk the pancake mix, baking powder, and cinnamon in a large bowl. Push the mixture to the sides of the bowl, making a well in the center.

Step 2. Separate the eggs and whip the egg whites. Separate the eggs, letting the whites fall into a medium bowl. Place the yolks in the center of the well in the dry ingredients. Beat the egg whites until soft peaks form (peak curls over the tip). Set them aside.

Step 3. Mix the wet and dry ingredients. Whisk the mashed banana, milk, and egg yolks in the well. Whisk the banana mixture into the dry mixture until just combined. Do not overmix, there should be lumps.
With a spatula, gently fold the beaten egg whites into the pancake batter until just incorporated. Let the batter rest for 5-10 minutes.

Step 4. Make the pancakes. Heat a cast iron skillet or non-stick pan or griddle over medium-low heat until a sprinkle of water sizzles across the surface of the pan.
Coat the pan with a thin layer of melted butter or oil. Wipe out the pan and repeat this step between batches.
Drop ⅓ cup of batter into the frying pan. Cook the first side until the edges are dry and small bubbles start to form and pop on the surface of the pancake, 2-4 minutes. Flip and cook the second side for another minute or two.

Step 5. Make caramelized bananas, optional. Warm a nonstick skillet over medium heat. Place the butter into the pan. Slice the bananas into ½" to ¾" slices. Add the slices of bananas, maple syrup, a sprinkle of cinnamon, and a dash of salt to the pan. Cook for a few minutes on each side until golden brown.

Step 6. Serve and enjoy. Serve pancakes with warm caramelized bananas or fresh fruit and a drizzle of maple syrup. We also like to smear a little peanut butter or Nutella in between layers of pancakes :).

- Check the center for doneness. To ensure the center of the pancake is done, insert a toothpick into the center. If it comes out clean, it's done.
- Watch the heat. If your pancakes are too brown before it's time to flip, turn down the heat. The natural sugars in banana pancakes can make them brown faster than regular pancakes.
- Wipe the pan between batches. Leftover butter and sugar can burn and affect the next batch.
- Flip only once. Flipping pancakes more than once can deflate the puffy centers.
- Keep pancakes warm until ready to serve on a baking sheet or platter in a 200-degree oven.

- Store leftover banana pancakes in an airtight container for up to 3 days. Separate layers with parchment or wax paper so they don't stick together.
- Warm pancakes in the microwave in 20-30 second intervals until hot.
🧊Freezing Instructions
- Cool pancakes completely on a wire rack, then stack with paper towels or parchment paper between each pancake. Place in an airtight container or freezer bag and freeze for up to 3 months.
- Microwave directly from frozen or warm in a toaster or toaster oven until heated through.

The banana, pancake/banana Foster recipe was fantastic. I used equate pancake mix from Walmart and I substituted honey for maple syrup and it still was absolutely great. I would recommend setting the temperature at medium low because the pancakes are so thick and fluffy. I also put a lid on while waiting for the pancake to cook to make sure that it was cooked all the way through.
