When pumpkin season rolls around, and you have a hankering for all things pumpkin spice, this creamy pumpkin pie pudding is a great recipe to satisfy your cravings -- and your sweet tooth!
And it's a super easy recipe. No baking, just 5 simple ingredients and 5 minutes to whip up creamy pudding that tastes just like pumpkin pie.
🍂Ingredients

- Instant pudding mix. I use vanilla pudding or cheesecake pudding, but you can use any flavor. White chocolate, butterscotch, even chocolate would taste great!
- Pumpkin pie spice. Pumpkin pie spice is a warm spice blend made with cinnamon, ginger, cloves, and nutmeg. If you don't have it in your cabinet, you can easily make your own pumpkin pie spice.
- Brown sugar. Just a little bit of brown sugar adds richness because of the molasses -- and also helps get rid of that "vegetal" flavor of the pumpkin.
- Pumpkin puree. Be sure to grab a can of pure pumpkin puree and not pumpkin pie filling, which has sugar and spices added.
🥛Variations
- Sugar-free pudding. Sugar-free instant pudding mix may also be used. When I tested it, I skipped the brown sugar -- I didn't try any sugar-free sweeteners as a substitute.
- Almond milk. For a dairy-free treat, substitute 1 cup of almond milk for dairy milk.
🥣How to Make Pumpkin Pudding
Step 1: In a large bowl, whisk the pudding mix, pumpkin spice, and brown sugar to break up any clumps. Add about ½ of the milk and briefly whisk until smooth. Whisk the rest of the milk into the pudding mixture.
Step 2: Add the pumpkin puree and whisk 1-2 more minutes until completely combined.
Step 3: Transfer to a serving bowl or divide pudding into dessert cups for individual servings. Allow pudding to set 5 minutes.
Step 4: Serve with Cool Whip or whipped cream and toppings like mini chocolate chips, chopped pistachios, and crushed graham crackers.

Ingredients
- 3.4 oz. instant vanilla pudding mix or cheesecake or white chocolate flavor
- 1 teaspoon pumpkin pie spice
- 1 tablespoon brown sugar
- 1 ¼ cups cold milk
- 1 cup pumpkin puree
Instructions
- Whisk pudding mix, brown sugar, and pumpkin pie spice to break up any clumps. Add ½ of the milk and whisk 30 seconds, until smooth. Whisk in the rest of the milk. Add the pumpkin puree and whisk 1-2 minutes until well combined. Allow to set 5 minutes. Serve with whipped cream and toppings.
