I just can't stop making coconut desserts. Like these Coconut Dream Bars, Mocha Chocolate Chip Macaroons, Chocolate Coconut Balls, and Hello Dolly Bars.
So when a hot summer day rolled around and the craving for a frozen treat struck, I was powerless to the pull to make a coconut frozen dessert.
I turned to my recipe for Lemon Blueberry Frozen Yogurt Graham Cracker Sandwiches for inspiration and made these delicious Coconut Lime Frozen Yogurt Sandwiches.
They're so easy to make by making a smooth frozen yogurt mixture from whipped topping and coconut yogurt. When frozen it has a silky, creamy texture, similar to ice cream.
Next stir in some lime zest and coconut flakes, sandwich the yogurt between cookies or graham crackers, freeze, and roll them in chocolate chips, nuts, coconut, or sprinkles.
See? Easy peasy. The hardest part is waiting for them to freeze!

Ingredients
This simple 6-ingredient recipe is easy to make with things you can find in any grocery store.
Coconut Greek yogurt. Rich, thick, creamy coconut Greek yogurt adds flavor and tang to the ice cream mixture. You can use full fat or low-fat Greek or regular yogurt.
Thawed whipped topping. I've made these with both Cool Whip and TruWhip, a "better-for-you" frozen whipped topping. If you've never heard of it, check it out here.
Lime zest. Lime zest is a bright and fresh accent to the rich coconut flavors.
Sweetened coconut. Coconut flakes add texture and sweet, nutty coconut flavor to the ice cream.
Vanilla extract. Pure vanilla extract adds warm flavor to these store-bought ingredients.
Cookies or graham crackers. Use any kind of graham cracker or cookie you like. I used chocolate covered graham crackers, but you can use regular graham cracker squares or sheets or any kind of cookie! Like chocolate cookies, chocolate chip cookies, or even coconut macaroons (mmmmm....)!
Toppings. Roll the frozen sandwiches in chocolate chips, chopped white or dark chocolate, toasted coconut, nuts, or sprinkles.
Recipe Variations
You can easily customize this recipe to come up with your own favorite flavors of frozen yogurt sandwiches.
Stirring in some frozen or fresh fruit or a swirl of jam is a great way to add even more flavor!
Here are a few ideas:
Chocolate chipper: vanilla yogurt, chocolate chip cookies, rolled in mini chocolate chips
Ginger Lemon: lemon yogurt, lemon zest, ginger or molasses cookies, rolled in chopped white chocolate
Black Forest: cherry yogurt, frozen chopped cherries, chocolate wafers, rolled in chocolate shavings
Turtle: salted caramel yogurt, chocolate cookies, rolled in chopped pecans
Key lime: lime yogurt, lime zest, graham crackers, rolled in crushed graham crackers
Strawberries & cream: vanilla yogurt, fresh strawberries, graham crackers, rolled in chopped white chocolate
Step-by-Step Instructions
Step 1
Line a 9x13 pan or baking sheet with sheets of plastic wrap that are long enough to wrap the frozen yogurt sandwiches in.
Lay down one row of 5 graham cracker cookie sheets or 2 rows of individual cookies -- flat side up (for reference, these cookies are about a 2.5 inch square).
Step 2
In a large bowl, mix together the yogurt, lime zest, vanilla, and shredded coconut. Gently fold in the whipped topping.
Step 3
Carefully dollop spoonfuls of mixture onto the cookies. Use an offset spatula or back of a spoon to spread the yogurt so it is smooth and covers all of the cookies.
Step 4
Place the remaining graham crackers on top to create sandwiches.
Pull the plastic wrap over the sandwiches and snugly wrap them up.
Step 5
Cover the pan and place it in the freezer for 4 hours or until they are completely frozen.
Step 6
To create individual ice cream sandwiches, place the entire block of frozen yogurt sandwiches on a cutting board. Cut between each cookie or graham cracker sheet to make individual sandwiches.
Step 7
Roll the edges of your coconut ice cream sandwiches in mini chocolate chips, chopped almonds, shredded coconut, sprinkles, or whatever you love.
Storage
Wrap the homemade frozen yogurt sandwiches in plastic wrap and store them in an airtight container in the freezer for a couple of weeks. If you prefer, you can wrap them individually and place them in a freezer bag for a quick snack the kids can grab on their way out the door.
Expert Tips
You can use regular or Greek yogurt in these ice cream sandwiches.
Wrap the plastic wrap nice and tight to keep the yogurt mixture between the cookies while it freezes.
Cool Whip and TruWhip both work well in this recipe.

Ingredients

- 1 5.3 oz cup coconut creme Greek yogurt
- zest of one lime
- 1 teaspoon vanilla
- 1 cup sweetened shredded coconut
- 1 8 oz. tub frozen whipped topping, thawed
- toppings: chocolate chips, chopped nuts, coconut, sprinkles -- whatever you love!
Instructions
