    Coconut lime ice cream sandwiches are easy to make with just a few simple ingredients. Just mix together Cool Whip, coconut yogurt, coconut, lime zest, and vanilla, and sandwich it between your favorite cookies or graham crackers for a delicious homemade frozen dessert.

    Easy to make. DIY ice cream sandwiches are really easy to make when you rely on a few grocery store cheat items. Like Cool Whip. And cookies or graham crackers. Just stir the filling ingredients together, spread them over the cookies, wrap them, freeze them, and you’re just a few hours away from a big batch of homemade ice cream sandwiches. 

    Coconut ice cream. If you love coconut, you’ll love this coconut ice cream. Coconut yogurt and a full cup of shredded coconut go into this recipe. And for even more coconut texture and flavor, you can roll your ice cream sandwiches in plain or toasted coconut. 

    No-bake dessert. It doesn’t have to be 90 degrees to not feel like baking. You can make these anytime you want something cool and creamy. 

    Coconut + lime. Whenever I use Cool Whip in something, I try to zhuzh it up with super-duper flavor enhancers. This time, I used the zest of one lime, which is sooo nice with coconut. 

    Cookie ice cream sandwiches. You can completely customize your ice cream sandwiches with whatever kind of cookie you like. Chocolate graham crackers are a great option. This time, I used chocolate-covered graham crackers. But chocolate chip cookies would be fab. Or shortbread cookies. Or macaroons. 

    How to make coconut lime ice cream cookie sandwiches

    Line a 9x13 pan with plastic wrap. Lay down one row of 5 graham cracker cookie sheets or 2 rows of individual cookies. 

    In a medium bowl, mix together the yogurt, lime zest, vanilla, and shredded coconut. Fold in the Cool Whip.

    Spread the mixture evenly over the cookies. Place cookies on top to create your sandwiches. Pull the plastic wrap over the cookies and snugly wrap them up. Cover the pan and place it in the freezer for 4 hours or until they are completely frozen.

    To create individual ice cream sandwiches, place the entire block of cookie sandwiches on a cutting board and cut between the cookies.

    Roll the edges of your coconut ice cream sandwiches in mini chocolate chips, chopped almonds, shredded coconut, sprinkles, or whatever you love.

    • 16 cookies (or 10 graham cracker sheets)
    • 1 5.3 oz cup coconut creme Greek yogurt
    • zest of one lime
    • 1 teaspoon vanilla
    • 1 cup sweetened shredded coconut
    • 1 8 oz. tub Cool Whip
    • toppings: chocolate chips, chopped nuts, coconut, sprinkles -- whatever you love!
