I credit my grandma's Christmas Chocolate Coconut Balls for my deep love of dark chocolate with coconut. This 2-ingredient Dark Chocolate Coconut Haystacks recipe is my easy, year-round way to enjoy the same flavors—without the extra sugar and fuss—with just coconut chips, melted chocolate, and a sprinkle of flaky salt.

- Coconut chips. Also known as coconut flakes, coconut chips are large shards of unsweetened coconut. You can buy them toasted or untoasted and toast them yourself -- super easy, I'll show you how. If you prefer to use sweetened shredded coconut, you'll use less -- just ½ cup.
- Dark chocolate chips. I love the combo of dark chocolate and coconut and the hubs likes white chocolate haystacks, so we do both. You can also use semi-sweet chocolate chips, milk chocolate chips, or butterscotch chips. I'm sure peanut butter chips would also be awesome!
- Optional, flaky sea salt. Because, yum!
🥣How to Make Chocolate Coconut Haystacks
Step 1: Toast the coconut in a dry pan warmed over medium heat for 3-5 minutes, until golden brown. Transfer to a cool plate to stop the cooking process.
Step 2: Melt the chocolate chips in the microwave in 30-second intervals, stirring between each one, until the chocolate chips appear about 90% melted but still have some soft shapes. Stir until smooth.
Step 3: Stir in the toasted coconut until completely coated. Drop the chocolate coconut mixture by the tablespoonful into little haystacks onto a cookie sheet lined with parchment paper. Sprinkle with a little flaky salt while the chocolate is still wet.
Step 4: Chill in the refrigerator for about 20 minutes until firm. Store in the refrigerator.

- Be careful not to cook the chocolate. Remove it from the microwave when the chocolate chips still have a few soft shapes and stir until smooth.
- Save time and buy pre-toasted coconut at the store!
- Use any kind of chocolate -- white, dark, semi-sweet, milk, even butterscotch chips. We've tried and approve of them all :).
- If you prefer, you can also melt the chocolate in a double boiler.

- Store chocolate coconut haystacks in the refrigerator for up to 2 weeks.
- Freeze between layers of parchment paper or wax paper for up to 1 month.

Coconut Haystacks
Ingredients
- 1 cup unsweetened coconut flakes, toasted aka coconut chips
- ⅔ cups chocolate chips of choice dark chocolate, semi-sweet chocolate, or white chocolate
- flaky sea salt
Instructions
- Toast coconut. Warm a dry nonstick skillet over medium heat. Add coconut and stir continuously until lightly toasted, 3-4 minutes. Immediately transfer to a cool plate.
- Line a baking sheet with parchment paper. Make room in the fridge for the pan.
- Melt chocolate in the microwave in 30-second increments, stirring after each, until the chips are almost completely melted, but you can still see a slight shape to them. Takes about 3 cycles for me. Stir until completely smooth. Add the toasted coconut and stir to combine.
- Drop 1-tablespoon portions of the chocolate coconut mixture onto the prepared pan. If desired, sprinkle the tops with a little sea salt.Chill until firm, about 20 minutes. Store in an airtight container in the refrigerator for up to 2 weeks or in the freezer for up to one month.
