- Choose the right tortilla. Soft, burrito-size flour tortillas work best. They're flexible, easy to fold, and hold fillings well. Gluten-free or low-carb tortillas can be more delicate and can crack, so warm them slightly before using.
- Warm it up. A quick 15-30 seconds in the microwave or a few seconds in a warm skillet makes tortillas more pliable and easier to roll without tearing.
- Don’t overfill. Large tortillas can take 1- 1 ½ cups of filling (you can lean toward the higher end if it's mostly smooshable, soft stuff). Too much filling makes it hard to fold and more likely to burst open. Spread everything evenly and leave space around the edges for folding.
