Friday night is pizza night. But after a busy workweek, there's no way I'm spending my Friday night rolling out dough. So off to the freezer section I go.
I recently spotted Connie's Frozen Pizza® Classic Thin Crust Sausage Pizza at Costco and was intrigued by the crunchy cornmeal crust, and wondered what their "signature sauce" was all about. I have very specific thoughts about what a pizza crust and sauce should be, so I was excited to give it a try.
We made one as is, and right away, I noticed the cornmeal crust wasn't like other frozen pizza crusts. It was sturdy with a really nice, crispy crunch. As for the sauce, the word I keep coming back to is fresh. It didn't have that tomato paste-y flavor some pizza sauces have. Ingredients
Mediterranean Pizza
- 1 Connie's Sausage Pizza, Classic Thin Crust
- ¼ cup pesto
- ½ cup quartered artichoke hearts drained, rinsed and patted dry
- ¼ cup sliced black or kalamata olives
- ¼ cup sundried tomatoes in oil, sliced
- ¼ cup crumbled feta cheese
- balsamic glaze, for drizzling
Loaded Fries Pizza
- 1 Connie's Sausage Pizza, Classic Thin Crust
- 4 slices crumbled bacon, divided
- 2 handfuls frozen thin French fries
- 1 cup shredded cheddar cheese
- 1-2 green onions, sliced
- ranch dressing, for drizzling
Taco Pizza
- 1 Connie's Sausage Pizza, Classic Thin Crust
- ⅓ cup refried beans
- 3 tablespoons salsa
- ¼ cup corn
- ¼ cup black olives
- 1 cup shredded cheddar cheese
- taco toppings: lettuce, tomatoes, corn, black olives, tortilla chips, sour cream, salsa
Nectarine & Prosciutto Pizza
- 1 Connie's Sausage Pizza, Classic Thin Crust
- ½ nectarine or peach, thinly sliced
- 1 tablespoon olive oil + more for brushing the nectarines

- 4 slices prosciutto

- Top the pizza with 3 pieces of crumbled bacon. Arrange the French fries in a single layer so they don't overlap. Top with cheddar cheese. Place the pizza directly on the center rack of the oven. Bake 17-19 minutes. Drizzle the top with ranch dressing and top with the green onions and the rest of the crumbled bacon.
Taco Pizza
- Stir the refried beans and salsa together. Spread on top of the pizza. Add the corn, black olives, and cheddar cheese. Place the pizza directly on the center rack of the oven. Bake 17-19 minutes. Top with shredded lettuce, tomatoes, more corn and black olives, crushed tortilla chips, sour cream, and salsa.
Nectarine & Prosciutto Pizza
- Arrange nectarine or peach slices on top of pizza and brush them with olive oil. Add the goat cheese and 1 tablespoon chopped pistachios. Place the pizza directly on the center rack of the oven. Bake 17-19 minutes. Toss the arugula with 1 tablespoon olive oil and the lemon juice. When the pizza is done, top with the prosciutto and arugula salad. Drizzle with hot honey and finish with shaved parmesan and the rest of the chopped pistachios.
Breakfast Pizza
- Top the pizza with 3 slices of crumbled bacon and 1 sliced green onion. Place the pizza directly on the center rack of the oven. Bake 12 minutes. Meanwhile, toast the waffle until golden brown and cut into bite-sized pieces. Whisk the eggs and cream with salt and pepper to taste. Cook over medium-low heat until set but slightly creamy. Remove the pizza from the oven, top with the scrambled eggs, waffle pieces, and cheddar cheese. Bake 5 more minutes. To serve, top with the rest of the green onions, crumbled bacon, and a drizzle of maple syrup.
