🍓Ingredients
See recipe card at the bottom of the post for the full list of ingredients and exact amounts.
- Fresh spinach leaves. Chop the spinach into smaller pieces for easier eating.
- Shredded boneless skinless chicken breast. Rotisserie chicken, leftover chicken, or breaded chicken strips would work here. Or make a fresh batch of shredded chicken on the stovetop or crockpot to use all week in other easy chicken recipes.
- Fresh strawberries. Fresh strawberries add the most delicious, sweet, juicy flavor. Cut them into bite-sized pieces and pat dry, if making ahead.
- Balsamic vinaigrette. I use homemade orange balsamic vinaigrette. You can use a different dressing -- this Honey poppyseed dressing tastes great with strawberry spinach salad.
- Cream cheese spread. A swipe of chive onion cream cheese spread is a delicious, herby glue to hold the wraps together. You can also use plain cream cheese.
- Tortillas. Use la arge burrtito-sized flour tortilla so you have enough room for the filling. I used spinach herb flavored tortillas, but you can use any flavor or plain or whole wheat tortillas.
🥬Variations or Substitutions
- Use your favorite leafy greens like kale, romaine, arugula, or a spring mix.
- Swap out the strawberries for fresh peaches, pears, or mandarin oranges.
- For milder onion flavor, try green onions.
- Instead of feta, use goat cheese, fresh mozzarella, aged white cheddar, or your favorite cheese -- shredded or sliced.
- Fresh vegetables. Add extra veggies like sliced avocado, red bell pepper, or diced tomatoes. Just make sure to back off some of the other filling ingredients so you don't overfill the wraps.
- For a little crunch, add toasted sliced almonds or plain or candied walnuts or pecans.
🥣How to Make Strawberry Spinach Chicken Wraps
Step 1: In a large bowl, combine the spinach, strawberries, onion, and enough vinaigrette to lightly coat everything. Set aside.
Step 2: Wrap the tortillas in damp paper towels and warm them in the microwave for 30 seconds to make them soft and pliable. Spread a thin layer of cream cheese on the tortilla. Mound ½ of the chicken spinach mixture on the middle of the tortilla. Top with feta cheese.
Step 3: Fold in the sides of the tortilla, then fold the bottom up. Roll up the wrap while tucking in the sides.
Step 4: Cut in half with a sharp knife. Serve with a side of fruit salad, chips, or pasta salad. Chicken spinach wraps are best enjoyed the same day.
👉Helpful Hint: If assembling wraps ahead of time, wrap them in parchment paper or foil. Plastic wrap can trap moisture and make them soggy.
✅Top Tips
- Warm up the tortillas to make them soft and pliable for easy rolling.
- Cut spinach into small bite-sized pieces to make the wrap easier to roll and eat.
- The layer of cream cheese helps create a moisture barrier to keep the wrap from getting soggy.
- Be careful not to overfill the tortilla.
🎁Storage
Wrap fully assembled chicken spinach wraps in parchment paper or foil and store in an airtight container in the refrigerator for up to 24 hours.
🗓️Make Ahead
- If assembling the wraps ahead of time, pat the strawberries dry before adding to the salad.
- When eaten the next day, the wrap will be slightly softer, and the strawberries and spinach may lose some of their crispness.
- For the freshest make-ahead chicken spinach wrap, prepare the chicken strawberry spinach salad without dressing and store in a separate container. Add the dressing and assemble the wrap just before eating.
❓FAQ
Use a large tortilla, don’t overfill, and roll it tightly. Softening the tortilla in the microwave makes it more pliable and easier to wrap. Wrapping it in parchment paper or foil helps hold its shape.
Yes! Just skip the tortilla and toss everything in a bowl. Add some crunchy nuts or croutons for extra texture.
Absolutely! Swap the chicken for sliced hard-boiled eggs, and you’ve got a sweet-savory breakfast wrap!
