- Large tortillas. Use any kind of burrito-sized tortilla you like. I used sun-dried tomato and spinach tortillas, but you can use plain flour tortillas, whole wheat tortillas, or gluten-free tortillas.
- Any flavor of hummus. I used plain store-bought hummus for convenience, but homemade hummus is so delicious and easy to make. Use your favorite hummus. This roasted carrot hummus or red pepper hummus would be delicious!
- Fresh veggies, Cut the fresh veggies into thin strips so they're easy to eat.
- Lemon juice. The hummus acts as the "dressing" for this wrap, so a little lemon juice is all that's needed over the vegetables. But feel free to drizzle with a little olive oil, zesty Italian dressing, or creamy hummus dressing.

- Pita bread. Instead of wrapping it up in a tortilla, tuck it into pita pockets.
- Add cheese. Instead of hummus, spread the tortilla with chive cream cheese or sprinkle on some crumbled feta or goat cheese.
- Raw veggies. Swap out any of the veggies and herbs with your favorites like red bell pepper, red onion, zucchini, artichoke hearts, sun-dried tomatoes, kalamata olives, radishes, or sprouts, fresh basil, or any kind of crisp lettuce.
- Fresh fruit. Make it savory and sweet with chopped crisp apples or fresh berries.
- Add more protein. Fold in leftover rotisserie chicken, deli turkey, or roasted garbanzo beans for even more protein and meaty texture.
🥣How to Make Raw Veggie Hummus Wraps
Step 1: Warm tortillas in the microwave for 30 seconds. Spread ¼ cup of hummus onto each tortilla. I keep it toward the center so it doesn't ooze out. Sprinkle with a little cayenne (optional), fresh parsley, and green onion.
Step 2: Place spinach leaves in the center of the wrap. Layer on the cucumber, avocado, tomato, and shredded carrots.
Step 3: Fold in the sides of the tortilla, then roll the bottom up and over the filling. Roll it closed while tucking in the ends.
Step 4: Cut in half with a sharp knife and enjoy. Or wrap in parchment for later. Best enjoyed the same day.

Hummus Wrap with Raw Veggies
Ingredients
- 2 large flour tortillas
- ½ cup hummus
- 1 dash cayenne pepper, optional
- 2 green onions, sliced
- 2 tablespoons chopped fresh parsley
- ½ cup baby spinach leaves
- ½ seedless cucumber, sliced (8-10 slices) or 1 medium cucumber
- 1 avocado, sliced (8-10 slices)
- ¼ cup shredded carrots
- 1 Roma tomato, sliced (8-10 slices)
- 2-4 tablespoons fresh lemon juice, olive oil, or Italian dressing, for drizzling
Instructions
- Warm the tortillas between layers of damp paper towels in the microwave for 30 seconds.
- Spread ¼ cup hummus onto each tortilla. Sprinkle with a little cayenne pepper, if desired, then 1 tablespoon green onion and 1 tablespoon chopped parsley.
- Place ¼ cup spinach leaves in the center of the tortilla. Layer with 4-5 slices of cucumber, tomato, avocado, and 2 tablespoons shredded carrots. Squeeze fresh lemon juice on top. Or drizzle with olive oil or Italian dressing.
- Roll up the tortilla wrap. Fold in the sides, angling slightly inward. Roll the bottom of the tortilla up and over the filling, gently pulling the filling toward you. Roll the tortilla closed while using your ring and pinky fingers to tuck in the ends.
- Cut the wrap in half and enjoy. Or wrap in parchment paper or foil and chill in the refrigerator. Best enjoyed within a few hours.
