Pineapple Cream Cheese Dip is a sweet, creamy dip recipe I made by accident.
I was testing a recipe for No Bake Pineapple Cream Cheese Pie, but the mixture came out too ... what's the word ... floofy. It had amazing flavor but wasn't the right consistency for a pie.
So we scooped it up and scarfed it down with fruit and graham crackers -- and now I'm sharing it with you so you can do the same!
This pineapple cream cheese dip is super easy to make with cream cheese, pineapple, vanilla pudding mix and Cool Whip, and a couple of simple steps that take 5 minutes.
It's so refreshing and light as air and the perfect dessert dip for summer parties.
We like to just keep some in the fridge next to a big bowl of fruit.

Softened cream cheese. Be sure to use room temperature cream cheese. I needs to be really soft so it will whip up nice and fluffy and mix well without lumps.
Crushed pineapple. Do not drain the pineapple juice, you'll use it to mix with the pudding mix.
Instant vanilla pudding mix. You'll need one 3.4 oz box -- the 4-serving size. Do not follow the directions on the box. You can also use French vanilla, white chocolate, or cheesecake pudding mix. Or try experimenting with other flavors like pistachio, banana, or lemon.
Cool Whip. Half of an 8 oz tub of Cool Whip makes this delicious pineapple dip recipe light and fluffy. If you're not into Cool Whip, Truwhip is a great alternative.
How to Make Pineapple Cream Cheese Dip
In a large bowl, whip softened cream cheese with an electric hand mixer until soft and fluffy.
Add the undrained pineapple and dry pudding mix to the cream cheese. Mix for 2-3 minutes.
Fold in 1 ½ cups of Cool Whip until completely combined.
Chill for 1-2 hours before serving. Serve with your favorite fruits, graham crackers, vanilla wafers, and pretzel chips.
