Boursin chicken pasta is an easy 30-minute pasta recipe packed with FLAVOR! The herbed Boursin melts into a velvety, creamy sauce, and the tender spinach and fresh cherry tomatoes add a burst of color and freshness. It's a super satisfying weeknight meal that feels a little fancy.

🍗Ingredients

- Short pasta. Use your favorite shape, like farfalle, penne, rotini, or orecchiette pasta.
- Chicken. I used boneless skinless chicken breasts, but you can also use chicken thighs.
- Boursin. Use your favorite flavor of Boursin cheese. You can also use flavored cream cheese, or plain cream cheese, and add garlic, chives, scallions, or your favorite fresh or dried herbs and spices.
🫛Variations or Substitutions
- Rotisserie chicken. Instead of cooking fresh boneless, skinless chicken breasts, stir cubes of leftover chicken into the sauce with the pasta.
- Vegetables. Add more fresh veggies such as mushrooms, zucchini, peas, or bell peppers. For longer cooking vegetables, cook the chicken, then transfer it to a plate. Sauté the garlic in the same pan, then add the vegetables and cook until tender. Continue with the recipe by stirring in the Boursin and pasta water to create the sauce.
- Seasonings. Season the sauce to taste with Italian seasoning, red pepper flakes, fresh parsley, or fresh basil.
🥣How to Make Chicken Boursin Pasta

Step 1. Cook pasta in a large pot of salted water until 1 minute less than package directions. Reserve 2 cups pasta water.

Step 2. Heat 2 tablespoons oil in a Dutch oven or large skillet over medium-high. Add chicken, season with salt and black pepper, and sear until golden brown, 5-7 minutes. Push chicken to the side. Add a little oil if needed, then cook garlic for 30 seconds.

Step 3. Stir in Boursin and 1 cup pasta water until melted. Reduce to medium heat and simmer 3-4 minutes until thickened.

Step 4. Stir in Parmesan and cooked pasta into the cheesy sauce. Add spinach and tomatoes; cook on low 3-4 minutes until spinach wilts and tomatoes soften. Add an extra dash of pasta water as needed. Top with extra Parmesan cheese.
👉Helpful Hint: If the pasta is done before the sauce, toss it in a little pasta water to prevent it from sticking together.

Chicken Boursin Pasta
Ingredients
- 8 ounces short pasta, such as farfalle or penne
- 2 tablespoons extra virgin olive oil
- 1 - 1 ½ pounds chicken breasts, cut into 1" cubes
- 2 cloves fresh garlic, minced
- 5.3 ounces Boursin cheese, cubed Garlic & Herb or Shallot & Chive
- ¼ cup grated Parmesan, plus more for serving
- 2 cups fresh baby spinach
- 1 cup cherry or grape tomatoes, halved
Instructions
- Boil pasta in a large pot of salted water for one minute less than package instructions. Before draining, reserve 2 cups of pasta water.
- Meanwhile, heat 2 tablespoons oil in a Dutch oven or deep 12" skillet over medium-high heat. Add the cubed chicken and season with salt and pepper. Sear chicken until brown, 5-7 minutes, depending on the size of the chicken pieces.
- Move the chicken over in the pan. Add a little more oil if needed and cook the garlic for 30 seconds. Add the Boursin and 1 cup of pasta water and stir until melted together. Turn the heat to medium and simmer until thickened, 3-4 minutes.
- Stir the Parmesan and cooked pasta into the sauce. Add the spinach and tomatoes. Turn the heat to low and stir until the spinach is wilted and tomatoes softened, 3-4 minutes. Add more pasta water, as needed throughout, to loosen the sauce.Top with more Parmesan, if desired.
