Creamy Chicken Boursin Pasta is an easy 30-minute pasta dinner with juicy chicken, garlic, Parmesan, spinach, and cherry tomatoes in a rich, herby Boursin cheese sauce. Easy weeknight dinner the whole family will love.

¼cupgrated Parmesan, plus more for serving
2cupsfresh baby spinach
1cupcherry or grape tomatoes, halved
Instructions
Boil pasta in a large pot of salted water for one minute less than package instructions. Before draining, reserve 2 cups of pasta water.
Meanwhile, heat 2 tablespoons oil in a Dutch oven or deep 12" skillet over medium-high heat. Add the cubed chicken and season with salt and pepper. Sear chicken until brown, 5-7 minutes, depending on the size of the chicken pieces.
Move the chicken over in the pan. Add a little more oil if needed and cook the garlic for 30 seconds. Add the Boursin and 1 cup of pasta water and stir until melted together. Turn the heat to medium and simmer until thickened, 3-4 minutes.
Stir the Parmesan and cooked pasta into the sauce. Add the spinach and tomatoes. Turn the heat to low and stir until the spinach is wilted and tomatoes softened, 3-4 minutes. Add more pasta water, as needed throughout, to loosen the sauce.Top with more Parmesan, if desired.
Notes
Stir the pasta occasionally while it cooks to keep it from sticking to the pan.
If the pasta is done before the sauce, toss it in a little pasta water to prevent it from sticking together.
Before draining the pasta, reserve 2 cups of pasta water for the sauce.
Cut chicken into bite-sized pieces so it cooks quickly and evenly.
Add pasta water, as needed, to keep the sauce creamy.
