Ingredients

Boneless skinless chicken breasts. You can also use chicken thighs in this cream of chicken recipe with pasta.
Low-sodium chicken broth. The pasta cooks in 2 cups of chicken broth and 2 cups of water to keep the dish from getting too salty. You can certainly use only broth if you prefer.
Seasonings. Onion powder, paprika, Italian seasoning, salt, and pepper -- feel free to add more or less to taste.
Dry penne pasta. There's no need to pre-cook the pasta -- it cooks right in the pan with the chicken!
Cream cheese. Use softened block-style cream cheese for easy melting and creamy texture.
Cream of chicken soup. Cream of chicken soup adds rich, savory flavor to the sauce. Low-sodium cream soup may be used.
Variations
- Use any kind of pasta that is similarly sized.
- Toss in some peas, cherry tomatoes, or spinach right at the end. Or stir in steamed fresh vegetables like broccoli or asparagus.

How to Make One Pot Chicken and Pasta
Step 1: Heat oil in a large skillet or Dutch oven over medium-high heat. Add cubed chicken, sprinkle onion powder, paprika, salt, and black pepper on the chicken. Sear until golden brown.
Step 2: Slide chicken over in the pan and add a little more olive oil and garlic, cook 30 seconds.

Creamy Chicken and Pasta (One Pot Recipe)
Ingredients
- 3 tablespoons olive oil, divided
- 1 pound boneless skinless chicken breasts, cut into ½ to 1 inch cubes
- salt and pepper
- ½ teaspoon onion powder
- ½ teaspoon paprika
- 2 cloves garlic, minced
- 2 cups chicken broth
- 2 cups water
- 16 ounces dry penne pasta
- 1 can cream of chicken soup
- 1 teaspoon Italian seasoning
- ½ cup grated Parmesan cheese
- 8 ounces cream cheese
Instructions
- Heat 2 tablespoons oil in a Dutch oven or deep 12" skillet over medium-high heat. Add the chicken and season with onion powder, paprika, salt, and pepper. Sear chicken until brown, 5-7 minutes, depending on the size of the chicken pieces.
- Move the chicken over. Add 1 tablespoon olive oil and cook garlic for 30 seconds. Add the broth, water, and pasta. Bring to a full boil, reduce heat to medium, and cover. Cook until pasta is al dente, 15-20 minutes. Stir occasionally to keep from sticking to the pan.
- To the pan, add cream of chicken soup, Italian seasoning, Parmesan cheese, and cream cheese. Stir until combined. The sauce will thicken as it cools. If it's too thick, add a little water or broth. Serve with more Parmesan and fresh herbs.
