Creamy Chicken and Pasta with cream of chicken soup, tender chicken breast, and penne pasta in a luscious creamy sauce is an easy one-pot meal that takes about 30 minutes. Delicious dinner recipe for busy weeknights the whole family will devour.
Heat 2 tablespoons oil in a Dutch oven or deep 12" skillet over medium-high heat. Add the chicken and season with onion powder, paprika, salt, and pepper. Sear chicken until brown, 5-7 minutes, depending on the size of the chicken pieces.
Move the chicken over. Add 1 tablespoon olive oil and cook garlic for 30 seconds. Add the broth, water, and pasta. Bring to a full boil, reduce heat to medium, and cover. Cook until pasta is al dente, 15-20 minutes. Stir occasionally to keep from sticking to the pan.
To the pan, add cream of chicken soup, Italian seasoning, Parmesan cheese, and cream cheese. Stir until combined. The sauce will thicken as it cools. If it's too thick, add a little water or broth. Serve with more Parmesan and fresh herbs.
Notes
Use a deep skillet or Dutch oven so you have plenty of room to boil the pasta and stir the creamy sauce together.
Stir the pasta occasionally while it cooks to keep it from sticking to the pan.
If you don't have a lid for your skillet, use aluminum foil.
The sauce will thicken as it cools. Add more broth to the sauce as needed.
