Ingredients

Mayonnaise. You can swap out the mayo with sour cream or Greek yogurt.
Apple cider vinegar. If you're out, try one of these apple cider vinegar substitutes.
Fresh cucumbers. I like English cucumbers or regular cucumbers with the seeds removed. You'll need 2 cups of chopped cucumber, which is about one English cucumber or 2 medium cucumbers.
Cherry tomatoes. Cherry tomatoes, grape tomatoes, or chopped regular or Roma tomatoes are all great options.
Red onion. Green onions would also be delicious.
Fresh dill. If you don't have fresh dill, use 1 teaspoon dried dill weed.
Fresh parsley. Swap out with your favorite herbs like basil or mint.
Step-by-Step Instructions
Step 1: Place all of the salad dressing ingredients into a food processor or blender. Process until smooth and creamy or to your desired texture.
Step 2: Place the cucumber, tomatoes, onion, dill, and parsley in a large bowl. Add the avocado dressing. Gently combine cucumber mixture with creamy salad dressing.
Step 3: Transfer the creamy tomato cucumber salad to a salad bowl and sprinkle the top with fresh parsley.
Step 4: Refrigerate or serve immediately. Delicious with Crispy Baked Thin Chicken Breasts or Slow Cooker Buffalo Chicken Sandwiches.
Store leftovers in the refrigerator for 3-4 days.
Expert Tips
- Creamy cucumber salad is best served within a few hours, but it will be just fine to serve the next day. To make more than a day ahead, prep the vegetables and store them in separate containers until it's time to make the dressing and assemble the salad.
- It is unnecessary to peel English cucumbers. I recommend peeling regular cucumbers from the grocery store if they have waxed skin or thicker skin with a bitter flavor.
- You don't need to remove the seeds from cucumbers, but it's a good idea if the seeds are very large. To remove the seeds, cut the cucumber in half lengthwise and run a spoon along the cut side to scoop out the seeds.

Ingredients
Creamy Avocado Dressing
- ½ ripe avocado
- 2 tablespoons mayonnaise
- 1 clove garlic, minced
- 1 tablespoon fresh dill
- ½ tablespoon honey
- 1 teaspoon apple cider vinegar
- salt and black pepper, to taste
Creamy Cucumber Tomato Salad
- 1 seedless English cucumber, chopped into 1" chunks 2 cups
- 1 ½ cups cherry tomatoes, halved
- ¼ cup red onion, sliced
- 1 tablespoon fresh dill
- 2 tablespoons fresh parsley, chopped
Instructions
- Blend avocado, mayonnaise, garlic, dill, honey, apple cider vinegar, salt, and pepper in a food processor or blender until smooth and creamy.
- Place cucumber chunks, halved cherry tomatoes, red onion, chopped dill and parsley in a large bowl. Add the creamy avocado dressing and toss until well combined.
- Enjoy immediately or chill for a few hours to let the flavors mingle.
