- Corn kernels. Use fresh, canned, or frozen corn. I used fire-roasted canned corn.
- Diced green chilies. Go mild or hot, according to your tastes.
- Shredded cheddar cheese. I like the bold flavor of sharp cheddar cheese, but mild cheddar also works well.

Step 1. In a large mixing bowl, beat the cream cheese, sour cream, chili powder, garlic powder, salt, and pepper together with a mixer until smooth and creamy.

Step 2. Add the corn, roasted chilis, shredded cheddar cheese, and green onions. Stir until combined.

For cold corn dip: Cover with plastic wrap and chill for 1-2 hours before serving.

For hot corn dip: Place in a greased baking dish, top with 1 cup of shredded cheddar cheese, and bake at 350 for 25-30 minutes until hot and bubbly.

- 1 cup shredded cheddar cheese plus 1 cup if making hot corn dip
