How to Make White Chocolate Shards
In a microwave-safe dish or glass measuring cup with a handle, heat 1 cup of white chocolate chips on high for 30 seconds. Stir. Continue to heat in 15-second intervals or until the chocolate is completely melted and smooth.
Immediately pour the melted chocolate onto a piece of parchment paper. Spread the chocolate into a very thin layer. Very thin.
Place another piece of parchment on top of the chocolate and press down to release any air bubbles.
Carefully roll up the parchment into a one-inch roll, or as close as you can get to that. Place the roll in the freezer for at least an hour or the refrigerator for several hours.
Once the chocolate is firm, unroll the parchment paper. You can leave the shards in long strips or break them up into random pieces, like I’ve done here.
Then use your imagination to decorate your cakes. You can:
- Randomly place them over your frosting
- Lightly poke them into the cake to give height and dimension
- Pile them high
- Lay them all in the same direction for a uniform look
- Line them up along the sides of a layer cake
- Use for a garnish on top of dollops of whipped cream
- … or whatever comes to mind!
It is best to place the chocolate shards on a cake or cupcake before the frosting has set. Once the frosting has set, it will better hold the chocolate shards in place.
