    This easy homemade Caesar dressing recipe has a thick creamy texture and rich classic Caesar flavor -- without raw eggs. Just a few simple ingredients like mayo, garlic, anchovy paste, lemon, Parmesan, and Dijon. A quick, foolproof, simple Caesar dressing, perfect for salads, wraps, or dipping veggies.

    Homemade dressing always taste 8.5 million times better than store-bought dressings. And this creamy Caesar salad dressing without eggs is officially one of my new favorites to whisk together. It's fast and easy, and the ingredients are simple and things you might already have on hand. 

    If you don't usually have anchovy paste, an open tube has a remarkably long shelf life (it lasts for months in the fridge), so once you have it, you can whip up batches of this dressing on a regular basis. It's my go-to recipe for this Blackened Salmon Caesar Salad with Ciabatta Croutons.

    • Mayo. Use a good quality mayonnaise that won't compete with the rest of the flavors. 
    • Anchovy paste. It's just what it sounds like: anchovies (plus oil and salt) in a tube. Anchovy paste can live in your fridge for a long time and is a handy way to add rich umami flavor to dishes like roasted vegetables, stew, pasta dishes, and more. 
    • Garlic cloves. To get the most flavor from the garlic, grate it with a microplane or mince it with a garlic press. 
    • Parmesan cheese. Finely grated Parmesan cheese helps bring out the distinctive, funky flavor we love in Caesar salad dressing. 
    • Worcestershire sauce. More deep, rich flavor, including molasses and anchovies. 
    • Fresh lemons. For the best and brightest flavor, use freshly squeezed lemon juice, if possible.
    • Salt. It may be salty enough with the anchovy paste and Parmesan, but if it's a little bland, add salt. I did. 

    🌿Variations or Substitutions

    • Anchovy fillets. Instead of anchovy paste, finely mince 4 whole anchovies and mix it into the dressing. 
    • Greek yogurt and sour cream. Swap out some or all of the mayo for plain Greek yogurt. If the yogurt is chalky, smooth out the texture with sour cream or extra virgin olive oil. 
    • Fresh herbs. Herbs aren't typically found in classic Caesar salad dressing, but feel free to add fresh dill, thyme, basil, or chives. 
    • Garlic powder. Fresh garlic is always best, but in a pinch, you can substitute ¼ teaspoon of garlic powder for each clove of garlic. 

    🥣How to Make Caesar Salad Dressing without Raw Eggs

    Step 1: Whisk all of the dressing ingredients together in a medium bowl until completely combined.

    Step 2: If possible, chill the dressing for at least one hour to allow the flavors to fully develop. Toss with your favorite salad greens or serve on the side. Thin with water as needed until it reaches your desired consistency. I find it's the right thickness when tossed with lettuce, but needs to be thinned a little before serving as a pourable dressing on the side. 

    👉Helpful Hint: Thin it out, if needed. Add a splash of water if you prefer a thinner dressing for drizzling.

    • Use good mayo. The mayo is the creamy base, so use one that tastes good to you.
    • Grate your own Parmesan. For the best flavor and texture, freshly grated cheese works best.
    • Let it sit. The flavors deepen after about an hour in the fridge. 

    ❓FAQ

    How long does Caesar dressing last in the fridge?

    Stored in an airtight container, it’ll stay fresh for up to 5 days. Stir before serving.

    Can I leave out the anchovy paste?

    Yes, but it’s a key ingredient for that traditional Caesar salad dressing flavor. The Worcestershire sauce may provide enough of that umami flavor. You can also try adding chopped olives or capers for a briny flavor. 

    Can I make it without mayo?

    Mayo is the creamy base, but you can experiment with Greek yogurt or sour cream for a tangier, lighter version.

    Can I use this as a dip or sandwich spread?

    Yes! This classic dressing isn't just for salads! It's also delicious as a dip for veggies or fries, or spread onto wraps and sandwiches.
