    We’re big fans of easy, make-ahead breakfasts, and for the longest time, overnight oats were the go-to. But now, this blueberry chia pudding has quickly become a favorite. And not just for the many (!) health benefits of chia seeds. It's a creamy, satisfying dish that’s as versatile as it is delicious, and it's so quick and easy to make a big batch for the week.

    What is Chia Pudding?

    Basic chia pudding is a simple mix of chia seeds, liquid, and usually a sweetener. The basic ratio I use is ¼ cup chia seeds to 1 cup of liquid. After soaking for 15-20 minutes, the seeds start to absorb the liquid—over 10 times their weight—and the mixture takes on a gelatinous, tapioca pudding-like texture. Letting the seeds soak overnight creates an even thicker, creamier pudding. In fact, I often find it’s even better on day two!

    What is Blueberry Chia Seed Pudding?

    For this blueberry version, I incorporate mashed or blended blueberries into the mix. This changes the liquid ratio slightly—I use 2 tablespoons of chia seeds to ⅓ cup of liquid instead of the usual ½ cup.

    Why adjust the ratio? Fresh blueberries add liquid to the mix. If I didn’t scale back, it would be too runny. The goal is to achieve that perfect creamy consistency.

    And here’s the best part: It’s much easier to thin chia pudding than to thicken it. If it's too thick, stir in more milk until it’s just right. If it’s too thin, make thicker pudding by mixing in something thick like Greek yogurt or adding more chia seeds—but you’ll need to wait a while for it to set. 

    New to Using Chia Seeds?

    If you’re new to chia pudding, I suggest starting with a thicker consistency and adjusting with more milk as needed. That way, you’ll always end up with a deliciously creamy texture. This Blueberry Chia Pudding recipe is a fantastic base to start with. It’s easy to customize—adjust the sweetness, mix in some yogurt, or if you're not sure about the texture of chia seeds, blend it into a silky-smooth treat. 

    🫐Ingredients

    • Blueberries. You can use fresh or frozen blueberries. 
    • Milk of choice. Any type of milk -- dairy or plant-based milk -- will work. Soy milk, oat milk ... You could even use water if you wanted to. 
    • Maple syrup or honey. Add sweetener, as needed. If your berries are very sweet, you might not need any. 

    🍌Variations or Substitutions

    • Fruit. Swap out blueberries for any frozen or fresh berries or fruit. You may need more or less liquid depending on the water content of the fruit. We love this Banana Chia Pudding. 
    • Yogurt. Layer or mix in plain or vanilla Greek yogurt for extra creaminess. 
    • Stir-Ins. Stir in a spoonful of peanut butter or almond butter. 
    • Toppings. The best part of chia pudding is piling on your favorite toppings! This Blueberry Almond Granola would be amazing! Here are some more ideas:
      • Fresh or frozen berries (slightly thawed) or fresh fruit
      • Sliced bananas, mango, or pineapple
      • Dried fruits: cranberries, blueberries, or raisins
      • Orange, lime, or lemon zest
      • Toasted nuts: almonds, walnuts, or pistachios
      • Seeds: pumpkin seeds or sunflower seeds
      • Toasted coconut flakes or chips
      • Sweet treats: chocolate chips or cocoa nibs
      • Crunchy granola or cereal
      • Fruit purees or berry compote
      • Flavor extracts. A splash of maple, orange, almond, or vanilla extract
      • Drizzles: peanut butter, honey, or maple syrup
      • Spices: a dash of cinnamon or nutmeg

    🥣How to Make Blueberry Chia Seed Pudding

    Step 1: Gently mash blueberries in a medium bowl. You may need to slightly soften the berries in the microwave for 15-30 seconds before mashing. Add the milk, chia seeds, and sweetener and cinnamon (if using). Stir well. Wait 5-10 minutes and stir again to keep the chia seeds from clumping. Cover and refrigerate the chia mixture for at least 6 hours or overnight.

    Step 2: The next day, enjoy as-is or mixed or layered with yogurt. Add your favorite toppings of choice and enjoy.

    Optional, blend chia pudding: Blend blueberry chia pudding on its own and layer with yogurt for a pretty parfait.

    Optional, blend chia pudding with yogurt: Blend chia pudding with ¼ to ½ cup Greek yogurt for a creamy treat.  

    👉Helpful Hint: Thin/thicken as needed. The longer the chia seeds sit, the thicker the mixture will get. Add a splash of milk as needed until it's the right consistency. 

    ✅Top Tips

    • Stir. Give the mixture a good stir after 5-10 minutes to keep the chia seeds from clumping or settling on the bottom. If you think of it, give it another stir sometime during the day. 
    • Sweeten, as needed. Add sweetener to taste. If the berries are really sweet, you might not need any. 
    • Soak. For best results, give the chia seeds plenty of time to soak. I prefer overnight, at minimum, and sometimes a full 1-2 days.
    • Blend or layer with yogurt. For extra creaminess, stir in some yogurt or blend with yogurt to make extra creamy blueberry pudding. A regular blender will give it a smoother texture, but it won't be completely creamy. For completely smooth blended chia pudding, use a high-speed blender.  

    🎁Storage

    • Blueberry chia pudding. Store in an airtight container or mason jar in the refrigerator for 3-4 days.
    • Toppings. Store toppings in a separate container to keep them fresh and from getting soggy.

    Ingredients
      

    • ½ cup blueberries, fresh or frozen
    • 2 tablespoons chia seeds
    • ⅓ cup unsweetened almond milk or any dairy or non-dairy milk of choice
    • ½ - 1 tablespoon maple syrup, optional, to taste
    • ¼ teaspoon cinnamon, optional

    For Blended Berry Chia Pudding

    • ¼- ½ cup Greek yogurt, optional plain or vanilla
    Prevent your screen from going dark

    Instructions
     

    • In a medium bowl, gently mash blueberries with a fork to your desired consistency. If necessary, briefly warm them for 15-30 seconds in the microwave until soft enough to mash.
      Careful, the berries may sputter in the microwave and the juice may be hot.
      Add the rest of the ingredients and stir well. Stir again in 5-10 minutes.
      Cover and refrigerate overnight. Top with fresh berries, toasted nuts, and granola.

    Blended Berry Chia Pudding: Two Ways

    • Blend blueberry chia pudding in a regular or high-power blender for a smoother consistency.
      •Blend it on its own and enjoy as-is or layered with yogurt (pictured).
      •Or blend it with ¼ to ½ cup of Greek yogurt to make it extra creamy.

    Notes
