Berry Chia Seed Pudding with fresh or frozen blueberries is sweet, creamy, and easy to make with just a few simple pantry ingredients. ⅓cupunsweetened almond milkor any dairy or non-dairy milk of choice
½ - 1tablespoon maple syrup, optional, to taste

For Blended Berry Chia Pudding
¼- ½cupGreek yogurt, optionalplain or vanilla
Instructions
In a medium bowl, gently mash blueberries with a fork to your desired consistency. If necessary, briefly warm them for 15-30 seconds in the microwave until soft enough to mash. Careful, the berries may sputter in the microwave and the juice may be hot. Add the rest of the ingredients and stir well. Stir again in 5-10 minutes. Cover and refrigerate overnight. Top with fresh berries, toasted nuts, and granola.
Blended Berry Chia Pudding: Two Ways
Blend blueberry chia pudding in a regular or high-power blender for a smoother consistency. •Blend it on its own and enjoy as-is or layered with yogurt (pictured). •Or blend it with ¼ to ½ cup of Greek yogurt to make it extra creamy.
Notes
Stir. Give the mixture a good stir after 5-10 minutes to keep the chia seeds from clumping or settling on the bottom. If you think of it, give it another stir sometime during the day.
Sweeten, as needed. Add sweetener to taste. If the berries are really sweet, you might not need any.
Soak. For best results, give the chia seeds plenty of time to soak. I prefer overnight, at minimum, and sometimes a full 1-2 days.
Thin/thicken as needed. The longer the chia seeds sit, the thicker the mixture will get. Add a splash of milk as needed until it's the right consistency.
Blend or layer with yogurt. For extra creaminess, stir in some yogurt or blend with yogurt to make extra creamy blueberry pudding. A regular blender will give it a smoother texture, but it won't be completely creamy. For completely smooth blended chia pudding, use a high-speed blender.
