Homemade strawberry ice cream sandwiches are a sweet and summery treat you’ll feel great about giving your kids -- and yourself! They’re super easy to make using frozen bananas and strawberries, graham crackers, and all your favorite ice cream toppings.
Add two sliced frozen bananas and two cups of frozen strawberries, slightly thawed in the microwave for about 30 seconds, to your food processor.
Process until smooth. This will take a few minutes and you may need to stop and scrape down the sides or stir up the mixture to keep it moving.
Lay 5 graham cracker sheets next to each other in a 9 x 13 pan lined with plastic wrap. Spread the strawberry ice cream evenly across the graham crackers. Top with 5 more graham cracker sheets. Wrap the strawberry ice cream sandwiches in plastic wrap and freeze until firm.
Remove the sandwiches from the freezer and cut them into 5 sandwiches. Cut each sandwich in half, if you prefer.
Roll each ice cream sandwich in your choice of toppings. Enjoy right away or return them to the freezer, wrapped in plastic.
