Roasted Frozen Green Beans with Mushrooms & Almonds
Roasted Green Beans & Mushrooms is an easy and delicious frozen green beans recipe. This tasty side dish comes together with balsamic-caramelized frozen green beans, roasted mushrooms, toasted almonds, and a sprinkle of feta.
Preheat the oven to 450. Spray a sheet pan with nonstick cooking spray.
Place the frozen green beans and mushrooms on the sheet pan. Add the olive oil and balsamic vinegar, and salt and pepper, to taste.Toss the green beans and mushrooms with the olive oil and balsamic vinegar until everything is coated. Arrange the green beans and mushrooms in a single layer on the pan.
Roast for 20 minutes*, stirring once halfway through, rearranging the green beans and mushrooms in a single layer.
Add the garlic and almonds to the pan and stir everything together to combine. Roast for an additional 3-5 minutes, or until the almonds are toasted and the garlic is golden. Keep a close eye on it so the garlic and almonds don't burn.
Sprinkle with feta cheese to serve.
Notes
Arrange the frozen green beans and mushrooms in a single layer on the baking sheet so the vegetables can get a bit crispy. If they’re piled on top of each other, they will steam and become soggy. Adding fresh garlic and sliced almonds at the very end is the best way to keep them from burning.Keep a close eye after you add the garlic and almonds to keep them from burning. 4 minutes is perfect in my oven, but yours might be different. *You may need to adjust the cooking time if you are using very thick or very thin green beans.
