Preheat oven to 425. Scrub potatoes and cut into 1" thick pieces.
Place potatoes on a baking sheet. Drizzle the olive oil and evenly sprinkle soup mix, seasonings, and Parmesan cheese over the potatoes. Toss until the potatoes are completely coated. Arrange potatoes in an even layer.
Roast 30-35 minutes until the potatoes are golden brown and can be easily pierced with a fork. Serve with fresh parsley, if desired.
Notes
When roasting potatoes, choose a waxy type of potato like red, Yukon Gold, or fingerling.
Cut potatoes into uniform sizes to ensure the potatoes are evenly cooked.
