Place cocoa powder, espresso powder, maple syrup, and vanilla in a small bowl. Stir briefly. Add a few tablespoons of the yogurt and stir until smooth and there are no lumps of cocoa powder. It should look like chocolate sauce. Add the rest of the yogurt and stir until combined. Enjoy or cover and refrigerate for later.
Notes
Use whole-milk Greek yogurt for the thickest, creamiest texture. Lowfat or nonfat Greek yogurt will also work, but it might not be as creamy. I don't recommend regular yogurt -- it's too thin.
Stirring the cocoa powder and sweetener with a little bit of yogurt ensures a smooth, cohesive mixture without lumps.
