½ cup buffalo wing saucelike Sweet Baby Ray's or Frank's
½cupsliced green onions
3cupsshredded cheddar cheese, divided
28oz.frozen tater tots
optional toppings: buffalo wing sauce, ranch dressing, diced celery, blue cheese crumbles, sliced green onions,
Instructions
Preheat the oven to 425 and spray a 9 x 13 baking dish with nonstick spray.
In a large mixing bowl, combine the chicken, soup, ranch dressing, sour cream, buffalo wing sauce, green onions, and 2 cups cheese. Pour mixture into prepared baking dish.
Arrange frozen tater tots in an even layer on top of the buffalo chicken mixture.
Bake 35 minutes or until the tater tots are crispy and the sauce is bubbling up the sides. Sprinkle one more cup of cheese on top of the tater tots and bake for 5-10 more minutes or until the cheese is melted.
If desired, serve with more buffalo sauce, ranch dressing, blue cheese crumbles, diced celery, and sliced green onions.
Notes
If at all possible, shred your own cheese. It melts much creamier than pre-shredded cheese.
For extra-crispy tots, bake them for about 10 minutes on their own before adding them to the casserole.
Adjust the heat to your preference by using more or less buffalo sauce.
