Bacon Cheeseburger Sweet Potato Tater Tot Casserole (without condensed soup) is an easy weeknight one-skillet dinner that tastes like a bacon cheeseburger with sweet potato fries.
2cupspepper jack cheese, shreddedfor less spice, use Monterey Jack or cheddar cheese
30-40 ouncessweet potato tater tots
Instructions
Preheat the oven to 400 degrees.
Heat a cast-iron skillet over medium heat. Fry bacon until crispy. Remove bacon from the pan and place on a paper-towel-lined plate. Keep 2 tablespoons of the bacon drippings in the pan.
Brown the ground beef and onion in the bacon drippings in the pan. Drain excess grease. Add 2 sliced green onions, tomato sauce, tomato paste, Dijon mustard, Worcestershire sauce, garlic powder, cayenne pepper (optional), and salt and pepper. Simmer 5-10 minutes, until thickened.
Place ½ of the bacon over the ground beef mixture. Layer 1 cup of cheese over the bacon. Arrange the sweet potato tater tots over the cheese. Bake for 30 minutes.
Add one more cup of cheese over the tater tots and bake for 15-20 more minutes or until the tots and the cheese are golden brown.
Top with the remaining bacon and green onions. Serve and enjoy!
Notes
If you don't have an oven-safe skillet, prepare through simmering the meat mixture. Assemble in a greased 9-inch or 9×13 dish. Use more or less cheese and tater tots and adjust baking time, as needed, until the center reaches 165°F.
Use frozen tots. Thawed tots will turn soft instead of crispy.
Shred your own cheese for better melting and browning.
Adjust the spice level. For milder flavor, use Monterey Jack or cheddar cheese and omit the cayenne pepper.
