Hearty Sausage Rotel Dip is the ultimate party dip loaded with gooey Velveeta, cream cheese, ground beef, sausage, spices, and tomatoes. Easy appetizer for the holidays and game day you can make on the stove top or in the slow cooker.
Brown ground beef and sausage in a large skillet over medium-high heat. Drain off excess grease. Reduce heat to medium. Add the taco seasoning and water. Simmer until the water has evaporated.
Add cubed Velveeta, cubed cream cheese, and undrained Rotel tomatoes. Heat and stir until the cheese has melted.
Crock Pot Instructions
Brown and drain the sausage and ground beef as instructed. Add the taco seasoning and water and simmer until the water has evaporated.
Place the browned sausage and ground beef mixture into a slow cooker. Add the cubed Velveeta, cubed cream cheese, and rotel tomatoes and stir. Heat on low for 2 hours, stirring occasionally.
Reduce heat to warm and serve.
Storage & Freezing
Store leftovers in an airtight container in the refrigerator for 3-4 days. Freeze leftover Rotel sausage dip in a freezer-safe container for 1-2 months.
Notes
Use all ground beef or all sausage, if you prefer.
Do not drain the Ro-tel tomatoes.
Cube the Velveeta and cream cheese for faster melting.
As the dip cools, it will thicken, so it's best to serve it warm. Keep it warm on the stovetop or in a small crock pot. If desired, add a few splashes of milk if it thickens.
