Easy Apple Cobbler with cake mix and fresh apples is an easy, delicious apple dessert with tender apple pie-spiced apples, plump cranberries, and a soft yellow cake mix cobbler topping. Perfect dessert for fall.
Preheat the oven to 350. Spray a 9 x 13 baking dish with nonstick spray.
Peel, core, and chop the apples into ¼ - ½" slices and chunks to give the filling variety of textures.
Place the apples, dried cranberries, cornstarch, brown sugar, cinnamon, nutmeg, allspice, and salt into a large bowl. Toss until the apples are completely coated. Pour the apples into the prepared baking dish.
In the same bowl, stir the cake mix and butter until it comes together into a buttery crumble. Add the milk and stir until the mixture becomes thick and pasty. It's okay if there are lumps in it.
Use two spoons to dollop the cake batter over the apples. Slightly flatten the batter to cover the apples as much as possible. It's okay if they're not completely covered. Sprinkle the walnuts over the cake batter.
Cover the pan with foil and bake for 30 minutes. Remove the foil and, if desired, sprinkle the top with sugar. Bake for 30-45 more minutes or until the topping is baked through and the apples are tender. It should reach an internal temperature of 200 degrees.
Place on a wire baking rack to cool for 30 minutes. Serve warm.
Notes
Cut the apples into thin slices, about ¼" thick, and small chunks, no more than "½ inch thick, for a variety of textures in the filling. Dried cranberries are optional, but they plump up during baking and provide a tart pop of flavor. Raw turbinado sugar or granulated sugar gives the cobbler topping a satisfying crunch.
