Vegetarian Italian Stuffed Peppers

Vegetarian Stuffed Italian Peppers are filled with beans, artichokes, and kale and savory sauce, topped with pesto panko.  Great recipe for a fast, easy vegetarian weeknight dinner or meatless Monday meal.

– Bell peppers – Onion – Seasonings – Marinara sauce  – Cannellini beans – Artichoke hearts – Tuscan kale – Kalamata olives – Panko  – Pesto – Parmesan – Walnuts

Ingredients

Halve peppers and remove seeds. Broil until flesh begins to blister. 

Sautee onions and seasonings in olive oil. Add marinara and simmer. 

Stir in beans, artichokes, kale, and olives until kale softens. 

Combine panko, pesto, Parmesan, and walnuts. 

Spread sauce in pan and place peppers face-up. Spoon filling into the peppers. 

Top with pesto panko bread crumbs. Bake 15-20 min.  

Serve with more pesto, Parmesan, and fresh herbs.
