Shredded Salsa Chicken (Crock Pot)

Crock Pot Shredded Salsa Chicken is tender, juicy, and full of zesty flavor from just 4 ingredients.  Easy recipe, delicious in chicken tacos, salads, and sandwiches, or over rice or sweet potatoes.

– Boneless skinless chicken thighs – Fresh lime juice – Taco seasoning  – Salsa – Cilantro or parsley

Ingredients

Place chicken thighs in a single layer in a Crock Pot. Cover with the remaining ingredients. 

Cook on high heat 2 hours until chicken is done and easily shreds. 

Use two forks to shred chicken right in the Crock Pot or on a cutting board. 

Return chicken to crock pot. Cook on low 30 min. to let the chicken absorb the flavorful juices. Stir in fresh cilantro/parsley.

Use shredded salsa chicken for tacos, enchiladas, quesadillas, nachos, rice bowls, and more.
