Ingredients
  

Creamy Avocado Dressing

  • ½ ripe avocado
  • 2 tablespoons mayonnaise
  • 1 clove garlic, minced
  • 1 tablespoon fresh dill
  • ½ tablespoon honey
  • 1 teaspoon apple cider vinegar
  • salt, to taste

Creamy Cucumber Tomato Salad

  • 1 seedless English cucumber, chopped into 1" chunks
  • 1 ½ cups cherry tomatoes, halved
  • ¼ cup red onion, sliced
  • 1 tablespoon fresh dill
  • 2 tablespoons fresh parsley, chopped

Instructions
 

  • In your food processor or blender, add ½ of an avocado, 2 tablespoons mayo, 1 clove of minced garlic, 1 tablespoon dill, ½ tablespoon honey, 1 teaspoon apple cider vinegar, and salt. Process until smooth and creamy.
  • In a large bowl, add one large English cucumber chopped into one-inch chunks, 1 ½  cups of halved cherry tomatoes, red onion, chopped dill and parsley. Add the creamy avocado dressing. Toss until well combined.
