  • 16 cookies (or 10 graham cracker sheets)
  • 1 5.3 oz cup coconut creme Greek yogurt
  • zest of one lime
  • 1 teaspoon vanilla
  • 1 cup sweetened shredded coconut
  • 1 8 oz. tub Cool Whip
  • toppings: chocolate chips, chopped nuts, coconut, sprinkles -- whatever you love!

  • Line a 9x13 pan with plastic wrap. Lay down one row of 5 graham cracker cookie sheets or 2 rows of individual cookies.
  • In a medium bowl, mix together the yogurt, lime zest, vanilla, and shredded coconut. Fold in the Cool Whip.
  • Spread the mixture evenly over the cookies. Place cookies on top to create your sandwiches. Pull the plastic wrap over the cookies and snugly wrap them up. Cover the pan and place it in the freezer for 4 hours or until they are completely frozen.
  • To create individual ice cream sandwiches, place the entire block of cookie sandwiches on a cutting board and cut between the cookies.
  • Roll the edges of your coconut ice cream sandwiches in mini chocolate chips, chopped almonds, shredded coconut, sprinkles, or whatever you love.
