Cucumber Watermelon Salad

Cucumber Watermelon Salad is the freshest salad on the planet. Tossed in a honey-lime dressing with a kick of ginger and cayenne, it’s the perfect summer salad.

– English cucumber – Watermelon – Crumbled goat cheese or feta – Kalamata olives – Green onions – Fresh mint – Fresh lime juice – Honey – Ground ginger – Cayenne pepper – Salt

Combine watermelon and cucumber cubes, goat cheese, sliced olives and green onions, and mint in a large bowl

Whisk the dressing ingredients together and gently toss with the watermelon mixture.

Serve as-is or on a bed of your favorite salad greens. Enjoy!
