Tuscan Kale Soup

Tuscan Kale Vegetable Soup is a rich, hearty, and delicious soup filled with lots of veggies, creamy cannellini beans, ground beef, and kale.  An easy weeknight dinner recipe that's even better the next day!

– Olive oil – Celery – Carrots – Onion – Ground beef – Garlic – Paprika – Red pepper flakes – Tomato paste cont'd next pg. -->


– Beef broth – Diced tomatoes – Tomato sauce – Cannellini beans – Worcestershire sauce – Italian seasoning – Bay leaves – Corn – Green beans – Zucchini – Kale

Ingredients, cont'd

Sautee celery, carrots and onions in olive oil. Add beef, garlic, and seasonings. Stir in tomato paste. 

Add broth, tomatoes, tomato sauce, beans, Worcestershire, Italian seasoning, and bay leaves. Simmer. 

Add corn, green beans, and zucchini. Simmer. Add kale and simmer until soft. 

Serve with grated Parmesan and fresh herbs.  Enjoy!
