Tortilla Pizzas with Pesto + Goat Cheese

Tortilla Pizzas with Pesto & Goat Cheese bake in about 10 minutes.  Just layer on pesto, sun-dried tomatoes, olives, spinach, goat cheese, mozzarella, and Parmesan for a quick weeknight dinner.

– Burrito tortilla – Pesto – Goat cheese – Sun dried tomatoes – Kalamata olives – Mozzarella cheese – Spinach – Parmesan cheese

Ingredients

Brush the bottom of the tortilla with oil. Flip it over. Spread pesto over the tortilla.

Add dots of goat cheese, the sun-dried tomatoes, and kalamata olives.

Sprinkle on the mozzarella cheese, then chopped spinach. Finish with Parmesan cheese.

Bake for 9-11 minutes until the tortilla is crispy. Finish with dollops of pesto and a sprinkle of Parmesan.
