Sweet Potato Teriyaki Bowls

Sweet Potato and Rice Teriyaki Bowls with spicy mayo are loaded with teriyaki roasted sweet potatoes and red peppers, crispy ginger-garlic chickpeas, and sweet and savory toppings on a bed of rice.

–Sweet potato – Chickpeas – Seasonings – Red bell pepper – Teriyaki sauce  – Mayonnaise – Sriracha sauce – Cucumber, pineapple, radishes, green onion


Arrange chickpeas and sweet potatoes on baking sheet. Drizzle with oil and season. Roast. 

Add red bell pepper and teriyaki to sweet potatoes and toss until coated. Roast. 

Add red pepper and teriyaki to sweet potatoes, toss to coat. Roast until chickpeas are crispy and sweet potatoes are tender. 

Stir together mayo and sriracha. 

Assemble bowls with rice, chickpeas, sweet potatoes and peppers. Add toppings, drizzle with spicy mayo.
