Pumpkin Snickerdoodle Muffins are exactly what you want with your coffee in the morning.  They come together with an easy cookie mix, rolled oats, a full can of pumpkin, pumpkin spice, and a crunchy snickerdoodle streusel topping you won’t be able to resist.

Snickerdoodle cookie mix Rolled oats Pumpkin pie spice Baking powder Flour Oil Eggs Pumpkin puree Milk Melted butter


Combine cookie mix, oatmeal, and pumpkin pie spice. Set aside 1/2 cup for the streusel. 

To the remaining mix, add baking powder and flour. Stir.

Add oil, eggs, pumpkin, and milk.

Add cinnamon sugar packet and melted butter to reserved cookie mixture. 

Fill each muffin cup almost all the way full. Add streusel mixture to top of each muffin. 

Bake at 375 for 12-15 minutes. Place muffin tin on wire rack to cool 5 min. Remove muffins and place on wire rack to cool completely. 

Serve with a smear of butter, a drizzle of honey, or both, and enjoy!
