Oatmeal Rhubarb Crisp Bars

Oatmeal Rhubarb Crisp Bars with oatmeal cookie crust, gooey filling, and buttery crumble topping can be made with fresh or frozen rhubarb.  Delicious served warm or cold.

– Flour – Rolled oats – Brown sugar – Cinnamon – Baking powder – Salt – Butter – Rhubarb – Sugar – Cornstarch – Salt – Orange juice – Orange zest


Mix flour, oats, brown sugar, cinnamon, baking powder, and salt. Stir in melted butter.

Pat 2/3 of the mixture into 9x9 pan. Bake.

Combine rhubarb, sugar, cornstarch, orange juice and zest, and salt. Arrange over the crust.

Crumble remaining oatmeal crumb mixture over the top. Bake until golden brown.

Serve warm with a scoop of ice cream or chill until firm.
