Red Skin Potato Salad (Healthy-ish)

Redskin Potato Salad is a healthier spin on classic potato salad.  It’s bright and tangy, dressed with an avocado-yogurt dressing (no mayo!) for a fresh summer salad recipe everyone will love.

– Baby red potatoes – Eggs – Red onion – Fresh parsley – Fresh dill – Fresh tarragon – Green onions – Avocado – Greek yogurt  – Lemon juice – Apple cider vinegar – Honey – Dijon mustard – Salt & pepper – Paprika

Ingredients

Boil and chop the potatoes and eggs.  Toss the potatoes with a little apple cider vinegar.

Process dressing ingredients in blender or food processor. Toss dressing with potatoes, eggs, onions, and herbs.

Top with more green onions and a sprinkle of paprika.  Serve and enjoy!
