Red Skin Potato Salad  (No Mayo)

This Red Skin Potato Salad is a healthy-ish spin on classic potato salad.  It’s bright and tangy with fresh herbs and avocado-yogurt dressing (no mayo!), for a fresh summer salad recipe you'll love.

– Baby red potatoes – Eggs – Red onion – Fresh parsley – Fresh dill – Fresh tarragon – Green onions

Potato Salad Ingredients

– Avocado – Greek yogurt – Lemon juice – Apple cider vinegar – Honey – Dijon mustard – Salt & pepper – Paprika

Salad Dressing  Ingredients

Boil, peel, and chop eggs. To lighten up the salad, use 1/2 the yolks.  Boil and chop potatoes. Toss them with apple cider vinegar.

Process the dressing ingredients in a food processor or blender.  Toss the dressing with the potatoes, eggs, onions, and herbs.

Serve with a sprinkle of paprika and more green onion.
