Easy Rhubarb Bars

Rhubarb Crisp Bars are sweet and tart with a brown sugar oatmeal cookie crust, gooey fruit filling, and a buttery oatmeal crumble topping.  Easy recipe you can make with fresh or frozen rhubarb.

– Flour – Rolled oats – Brown sugar – Cinnamon – Baking powder – Salt – Butter – Rhubarb – Sugar – Cornstarch – Salt – Orange juice – Orange zest

Ingredients

Mix flour, oats, brown sugar, cinnamon, baking powder, and salt. Stir in melted butter.

Pat 2/3 of the mixture into 9x9 pan. Bake 10 min.

Combine rhubarb, sugar, cornstarch, orange juice and zest, and salt. Arrange over the crust.

Crumble remaining oatmeal crumb mixture over the top. Bake 30-40 more minutes or until golden brown.

Serve warm like a rhubarb crisp with a scoop of ice cream or chill until firm.
