Mini Blueberry Pies

Mini Blueberry Pies are adorable, delicious, and easy to make.  Made with fresh blueberries and tangy lemon curd in a golden brown pie crust, they're the perfect dessert for summer picnics and potlucks!

– Fresh blueberries – Sugar – Corn starch – Lemon zest – Cinnamon – Store-bought pie dough rounds – Lemon curd – Egg whites – Almond milk or milk – Sugar for sprinkling

Ingredients

Combine blueberries, sugar, cornstarch, lemon zest, and cinnamon.

Roll out pie dough and cut into desired shape. Arrange half of the cut-outs onto a baking sheet.

Place lemon curd onto the center of each one.

Top with the blueberry mixture.

Seal the top crust to the bottom crust.  Add egg wash and a sprinkle of sugar. Cut slits in each pie.

Bake until golden brown. Serve with whipped cream or a scoop of ice cream.
