Summer  Kale Slaw

Apple Kale Slaw is the perfect summer salad recipe.  It’s filled with colorful veggies and fresh fruit, tossed in a tangy no-mayo dressing. Perfect make-ahead salad for picnics or weekday lunches.

– Kale – Apple – Lemon juice – Salt – Carrots – Red cabbage – Parsley – Green onions – Red onion – Dried cranberries – Pepitas

Salad Ingredients

– Greek yogurt – Olive oil – Dijon mustard – Honey – Apple cider vinegar

Salad Dressing Ingredients

Massage the sliced kale with lemon and salt to soften it.  Chop or julienne the apple and toss it with the lemon juice. 

Add the carrots, red cabbage, parsley, green onions, red onion, cranberries, and pepitas. 

Make the no-mayo slaw dressing. Whisk together yogurt olive oil, Dijon, honey, and apple cider vinegar. 

Gently toss the salad with the dressing. Refrigerate for a few hours before serving to let the flavors mingle.
