Easy Green Chicken Enchiladas

Easy Green Chicken Enchiladas come together with shredded chicken, beans, corn, spices, and cheese rolled in tortillas, smothered in a creamy shortcut sauce. Wholesome, easy weeknight dinner.

– Salsa verde – Greek yogurt – Chicken – Black beans – Corn – Green onions – Green chilis – Chili powder – Cumin – Garlic powder – Onion powder – Oregano – Cayenne  – Parsley – Monterey jack cheese


Mix salsa verde and Greek yogurt together. Set aside.

Combine chicken, beans, corn, green onions, green chilis, parsley, spices. Stir in some of the sauce and cheese.

Roll the mixture up into the tortillas and place them into a casserole dish.

Pour the rest of the sauce over the tortillas and cover with the rest of the cheese.

Cover with foil and bake for 25 minutes at 375. Uncover and bake 15-18 more min. or until cheese is melted.
