Crock Pot Chickpea Cocktail Meatballs are an easy vegetarian New Year's Eve appetizer.  Make the meatballs from smashed chickpeas, then set them in the Crock Pot with a zesty barbecue sauce.

Chickpeas Onion Garlic Panko Egg Salt and pepper Parsley Barbecue sauce Jelly Cayenne


Smash the chickpeas with the back of a fork. Add the onion, garlic, panko, egg, salt, pepper, and parsley. Mix it all together.  

Use a tablespoon to portion out the meatballs. Roll them into meatballs and bake for 15-20 minutes at 375. 

Combine barbecue sauce and jelly. Add the meatballs and sauce to slow cooker for 3-4 hours on low or 2-3 hours on high. Serve and enjoy!
