Crock Pot Salsa Chicken

Easy Crock Pot Salsa Chicken is tender, juicy, and full of zesty, smoky flavor -- and just 4 ingredients.  This easy recipe is delicious in chicken tacos, salads, sandwiches, and more.

– Boneless skinless chicken thighs – Fresh lime juice – Chicken taco seasoning – Salsa – Chopped cilantro or parsley, optional

Ingredients

Place chicken thighs, lime juice, chicken taco seasoning, and salsa in the slow cooker. 

Cook on high for 2 hours or until cooked through to 165 degrees F. 

Shred the chicken with 2 forks or a hand mixer. 

Place the chicken back into the slow cooker on low to absorb the cooking juices. Stir in cilantro or parsley. 

Serve with warm tortillas for shredded chicken tacos. Or use in salads, enchiladas, quesadillas, and more.
