Cream Cheese Corn Casserole with Bacon is topped with crispy Fritos for a decadently delicious holiday side dish.  It's also super easy to make, thanks to the help of a few convenience ingredients.

Bacon Red pepper Onion Flour Cream cheese Milk Garlic powder Thyme Nutmeg Black pepper Corn Creamed corn Cheddar cheese Fritos Green onions


Fry bacon and set it aside. Keep 1 tbsp of bacon fat in pan.

Add onion and red pepper, cook 5 min, until soft. Add flour. Cook and stir for a few minutes.

Add cream cheese, milk, garlic powder, thyme, nutmeg, and pepper.

Stir and cook 5-10 min until sauce thickens.

Add corn, creamed corn, and 3/4 of bacon.

Top with cheese. Bake at 425 for 20 minutes, until cheese is melted.

Add crushed Fritos and bake for 5 more minutes. Broil for 1-2 minutes until Fritos are golden brown.

Top with diced red pepper, bacon, and sliced green onions.

Serve and enjoy!
