Corn Chowder is an easy soup recipe loaded with bright, fresh flavors that takes under 30 minutes to make.  Delicious way to use leftover turkey or rotisserie chicken.

Green onions Red pepper Orange pepper Jalapeno Olive oil Garlic Chili garlic sauce Light coconut milk Cooked chicken or turkey Corn Water chestnuts Lime Cornstarch Parsley


Saute green onion, peppers, and jalapeno in olive oil.

Add garlic and chili garlic sauce. Saute for 2 more minutes.

Add coconut milk, chicken or turkey, corn, water chestnuts, lime juice and zest, salt and pepper. Bring to boil, reduce to simmer for 10 minutes.

If necessary, thicken with mixture of cornstarch and water.

Stir in chopped parsley, top with sliced jalapenos. Serve and enjoy!
